With the motor running, add the oil slowly, and process a few seconds until the mixture is a smooth puree.
Blend, adding water as necessary to make a smooth purée (it will take 1/2 cup or more).
Fold in the olive oil and then the cream, without making the mixture a smooth puree.
With the machine running, slowly add the warmed oil until you have a thick, smooth puree.
Blend to a smooth puree and season to taste.
Add more cream and stock as needed to make a smooth, light puree.
Add about 2 cups of the broth and process to a smooth puree.
Process for about one minute, or until you have a smooth puree.
If necessary, use another tablespoon of water to create a smooth puree.
Process to a smooth puree (about 3 minutes on high).
