Remove the fish from the liquid and cut each skate wing into two portions.
Add the skate wings and saute until lightly browned, about three minutes on each side.
Select a baking dish large enough to hold the skate wings in one layer.
Place the skate wings in the wine mixture and simmer until they just turn opaque, six to eight minutes.
Heat skillets and place 2 skate wings in each.
Add the skate wings and cover with cold water.
Firm-fleshed skate wing, a special one evening, was a treat.
Add the skate wings, browned side up, to the pan with the vinaigrette.
Saute until the skate wings are opaque, about 2 to 4 minutes.
To serve, place a skate wing on each plate.
