Remove meat, and turn heat off for a minute or so.
Remove the meat and allow it to stand, covered, for 10 to 15 minutes.
Remove meat to a cutting board, and let rest a couple of minutes.
Remove the meat and set aside in a warm place.
Remove the meat from the oven, and let rest in a warm place.
Remove the meat from the pan and allow it to sit for 5 minutes.
Turn off heat, remove meat from pan, and let it sit on a board.
At this point, you may remove the meat from the oven and allow it to rest for up to an hour.
Remove the meat from the pan and keep it warm.
Remove meat to a plate and turn heat to medium.
