Pass the pear mixture through a food mill and place in a clean saucepan.
Add the pear mixture and sauté for 2 minutes.
Stuff the pear mixture into the channel, using the skewer to pack it in.
Stir into the pear mixture and cook until thickened, about 2 minutes.
Pour half of the vinaigrette over the pear mixture and toss to coat well.
Place equal portions of the pear mixture over the watercress.
Fold in the pear mixture until the dry ingredients are moistened.
Spread the pear mixture over the top, return to the oven and bake 20 minutes longer.
Pour 1/2 of the pear mixture into the mold and press it down lightly.
Lift out the figs and add to the pear mixture.
