When it is very hot, add eggplant and zucchini.
Add zucchini with its cooking juices to the rest of the vegetables.
Add zucchini, salt and pepper, and cook about 5 minutes longer.
Add zucchini and pepper strips and cook about 2 minutes.
When it shimmers, add zucchini and stir to coat with oil.
When the oil is very hot, add the eggplant, zucchini, salt and pepper.
Stir- fry for one minute, then add the carrots, zucchini and red pepper.
Add zucchini and simmer just until cooked, 1 to 2 minutes.
Reduce heat to a simmer, add zucchini, cover and cook 10 to 15 minutes, until vegetables are tender.
Add zucchini, a large pinch of salt and some pepper.
