Hydroxybenzoic acid may refer to several related chemical compounds:

Almonds contain polyphenols in their skins consisting in a combination of flavonols, flavan-3-ols, hydroxybenzoic acids and flavanones analogous to those of certain fruits and vegetables.

The leaves also contain a range of hydroxybenzoic acids: gallic acid and its ethyl ester, gentisic acid, anthranilic acid (vitamin L1) and protocatechuic acid, and also ellagic acid (alizarine yellow).
