Britain's main commercial species is the Burgundy truffle, Tuber aestivum, a black truffle.

Tuber aestivum (Summer or St. Jean truffle)

The summer truffle (Tuber aestivum) or burgundy truffle (Tuber uncinatum) is a species of truffle, found in almost all European countries.

The summer truffle, Tuber aestivum, is black outside but white inside, has comparatively little flavor, costs about a tenth the price of a black truffles and can be bought fresh only in summer.

The main varieties here are tuber aestivum the summer truffle (July - September) and the Burgundy truffle, tuber uncinatum (£400 a kilo) which appears in the Autumn.
